We take pride in the fact that all of our meats are responsibly sourced and where we can, from the areas surrounding our stores.
Offering our customers confidence and consistency with complete traceability
All of the beef sold in our shops is sourced from local auction marts, where we only buy the very best young heifers from trusted farms. We choose heifers as they consistently yield more tender meat with a better covering of fat and the vast majority of what we buy is of the Limousin breed.
It is also important to us that all cattle that we buy is under 30 months of age, this not only ensures tenderness but also allows us to receive the animals in carcase form for our skilled butchers to de-bone and prepare for our customers.
We personally attend the weekly sales at Northallerton and Darlington Auction marts to hand-pick the finest cattle and we also regularly attend sales at other Marts across the North (including Hexham and Thirsk) to ensure that our high standards are not compromised. The very best young lambs from local farms
Just like our beef; the lamb sold in our shops comes from Darlington and Northallerton Auction Marts as well as Barnard Castle Auction Mart where we buy the very best young lambs from local farms; predominantly in County Durham and North Yorkshire. Nidderdale Poultry: second to none
Nearly all of our poultry comes from Nidderdale Poultry from Pateley Bridge, near Harrogate as we have found that the quality of their produce is second to none.
John Penny & Sons Pork
When possible we buy our pigs from Darlington and Thirsk Auction Marts, however very few pigs are sold at auction these days so to maintain our high standards we source much of ours from John Penny & Sons who sell pork from across the North East and North Yorkshire.

Last week we bought seven Limousin Heifers at Northallerton Auction Mart from the following farms:

We bought twenty-four Prime Spring Lambs from Barnard Castle Auction Mart from the following farms:

- TA Alderson, West Peth Row Farm, Cockfield, Bishop Auckland, Co. Durham
